Wild garlic (Allium ursinum) is one of the best-known wild herbs of spring. It grows in shady, moist locations and is rich in vitamin C, minerals, allicin, and essential oils. Wild garlic has detoxifying, purifying, metabolism-boosting, anti-inflammatory, and antibacterial properties – ideal for spring cleanses and for supporting digestion, blood pressure, and cholesterol. The fresh leaves are perfect for pesto, herb butter, soups, or salads. The flowers and buds are also edible and can be pickled or used for decoration. Caution: There is a risk of confusion with poisonous plants such as lily of the valley and autumn crocus – only forage if you are absolutely sure!
